Timboon Railway Shed Distillery been making true small batch, Australian craft whisky on site since 2007. In 2020, their first estate barley crop was planted so that they can produce their own grain, a second, much larger still was installed and their own Cooperage established.

Single Malt Whisky “Christie’s Cut”

Christie’s Cut is Timboon Distillery’s second permanent line.

A premium, cask strength whisky in true, small batch craft style. It’s named after Inspector John Christie who at the turn of the 19th century tracked and captured Tom Delaney who was an illicit distiller in the Timboon area.

Like Christie himself, this malt is big and bold. It has a deep character and a long, full flavoured finish. Burnt raisins, silk, smoke and spice. Generally aged in smaller barrels of 25 – 50 litres. It’s a cracker of a whisky!

All Timboon Distillery single malt is made in their beautiful copper pot stills. Owner and distiller Josh Walker will usually have the still operating six days a week; bubbling, steaming and producing new make spirit to make their liquid gold. Josh grew up in Timboon and started his own farm contracting business at the age of 17. Move forward several years and the passion for whisky lead to the purchase of the distillery. Having traveled the well worn whisky paths across Europe and America, learned the trade and experienced first hand the boom in the world wide trend to drinking premium spirits, Josh is now a respected member of the rapidly growing Australian single malt distilling industry. Josh and his wife Caitlin, along with Josh’s family, are all involved in the operation, creating a great working atmosphere for this booming business.

The whisky they make at the Timboon Railway Shed Distillery is a true single malt whisky. Timboon Railway Shed Distillery use malted barley as the only grain ingredient processed in their mashing shed. Josh’s inspirations are the great single malts of Scotland and the Isles, so it’s only natural that their whisky is made to the same time honoured traditions. As well as Timboon Distillery Single Malt Whisky range, their portfolio of spirits also includes their renowned Coffee Cream liqueur, Strawberry Schnapps, a classic Limoncello and a Vodka, infused with an Australian vanilla bean.

The Shed

The Timboon Railway Shed Distillery offers a distillery experience in a location with a real ‘sense of place’.Food and whisky to inspire, share and replenish the traveller’s soul. The railway shed dates back to the 1800’s and has been beautifully restored with many original features maintained.
